Quick Coffee Cake.

Ok, so I found a recipe that I want to try on someone's blog a few days ago, but I'll be darned if I remember which blog. I copied down the recipe, I mean of course I did that, right?! But in all my excitement of finding something new to make, I forgot to bookmark which blog it was on so that I could give them credit. 

I'm posting the recipe anyway because it just sounds way too good to keep to myself. But if someone out there knows what blog I found it on, please, please, please holler so that I can give credit where credit is due. Thanks! But in the meantime-- enjoy!

Quick Coffee Cake
1 cup oil
2 eggs beaten
1 tsp vanilla
1 c milk
1 c sugar
3 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c brown sugar
2 tsp cinnamon
1 stick margarine melted

Make It! 
In a large mixing bowl. combine oil, eggs, vanilla and milk together. In a medium bowl, blend together sugar, flour, baking powder and salt. Combine egg mixture with flour mixture. Pour half the batter into a 9x13 pan. In a medium bowl, prepare streusel by combining brown sugar and cinnamon. Sprinkle half of streusel  on top of the batter. Top with remaining batter and then sprinkle the remaining streusel on top. Drizzle with melted margarine. Bake, uncovered at 350 for 25-30 minutes. Makes 18-24 servings.
