Saying Goodbye.

After giving it a lot of thought, I have decided it's time to say goodbye to my blog. While I have enjoyed writing it the past two years, I think it's time to move on.

Other than the obvious need to focus on school and family, I have decided it's time to focus on some other things in life. I have some goals I'd like to accomplish~ like reading the bible cover to cover. It's been on my "to-do" list for years and I have decided it's time to follow through with that goal. I would like to get back into scrapbooking. And I want to start training so I can run in some 5K's next summer and maybe even participate in a triathlon or two. My list of things I'd like to do and accomplish just keeps growing which is forcing me to re-prioritize my life as a result.

Blogging served it's purpose when I needed it, but now it's time to move on. It's time to find new things to experience. New lessons to learn and new adventures to take.

Roasted Chicken.

Found another recipe from Food Nanny to try when next quarter starts. Roasted Chicken. I'll confess, I have never made a roasted chicken. That would require liking chicken. Which I don't. I tolerate it at best. It would also require touching the chicken. Which I don't. I don't touch raw meat. At all. Ever. But I am still on the hunt for easy things to cook for dinner while I get through my second quarter of school so we don't have to suffer through McDonald's 4 nights a week again. That got to be too much~ for all of us. Including the checkbook. Hopefully all this recipe hunting will be worth it! Now here's the chicken recipe:

Roasted Chicken
1 whole roasting chicken, gutted and rinsed
A pinch of lemon pepper
A pinch of season salt

Make It!
Place chicken in a 9x13 pan. Sprinkle with lemon pepper and season salt and bake at 375 for an hour and a half or until the juices run clear.

That's it! Certainly couldn't get any easier, that's for sure! And to answer your question about the giblets~ I'll have Marty clean the chicken out the night before! Now she does have a recipe to make a gravy to go along with the chicken. I'm not sure if I would make it or not~ I'm not much into gravies. But I'll post it anyway just in case you are!

Gravy
Transfer chicken to a platter and tent with foil to keep warm. Meanwhile, leaving juices in pan, add 1 1/2 cups of chicken broth to the pan. Place pan on stovetop and cook on medium-high heat bringing the juices and broth to a boil. In small bowl or measuring cup combine 1/4 cup chicken broth and 1/4 cup flour. Stir together to make a paste. Continue stirring until smooth. When chicken broth is boiling add the paste stirring constantly for two minutes with a whisk or until thickened. Season with a pinch of salt and pepper and serve.
