The Things You Discover!

Oh the things you discover when you decide to clean up your blog! I was sifting through old drafts and wouldn't you know, I found this recipe saved as a draft from November. November! Who knew?! So I am posting it today. I think it's high time, don't you?!

Crunchy Chicken Casserole
2 large chicken breasts, cooked and cubed
4 carrots
2-3 medium potatoes
1 cup cheddar cheese, grated
¼ cup flour
¼ cup butter
1 can chicken broth
Seasoned bread crumbs

Make It!
Peel and cut carrots and potatoes and boil or steam until tender. Meanwhile, in a large saucepan, melt butter over medium heat. Gradually add flour and whisk until smooth. Add broth, stirring constantly until thickened. Remove from heat and add cheese; stir to melt. Add chicken and veggies to cheese sauce and stir till coated. Pour into a 9”x9” casserole dish. Top with seasoned bread crumbs. Bake at 375 for 30 minutes uncovered. Serves 3. This can always be doubled if feeding a larger family or group.
