Homemade Granola.

Meghan and I love granola. Especially if it's in some Vanilla yogurt. I started making it a few years ago, but it's one of those things where you forget just how easy it is to make so I never make it! So yesterday in my attempt to stay busy so I wouldn't think about Meghan being back at school and start crying, I decided to whip a batch up. So glad I did!

Homemade Granola
3 cups old-fashioned rolled oats (not instant)
3/4 cup sliced or slivered almonds
1/2 tablespoon cinnamon
1/4 teaspoon salt
2 tablespoons butter, melted
1/2 cup maple syrup
1 cup dried fruits (optional)

Preheat oven to 325 degrees. Either butter or line a baking sheet with parchment paper.
In a large bowl combine the rolled oats, nuts, cinnamon and salt.

In a small bowl, stir together the melted butter and maple syrup. Pour over the dry ingredients and toss together, making sure all the dry ingredients are coated with the liquid.

Spread onto prepared baking sheet and bake for about 30 - 45 minutes or until golden brown, stirring occasionally so the mixture browns evenly. Place on a wire rack to cool. Making sure to break up any large clumps of granola while granola is still warm.

Once the granola has completely cooled, store in an airtight container or plastic bag in the refrigerator. Makes 5 cups.
