Found and tried a new bar recipe the other day that I thought I would share. I got it off of a Mormon website. I don't know if it actually originated from the Mormons or not~ I am sure some variation of it has been around forever~ but the bars were yummy all the same!
Buckeye Bars
1 stick butter, softened
3/4 c crunchy peanut butter
22 Nilla Wafers, crushed
2 c powdered sugar
4 oz Cool Whip, do not thaw
3 squares semi sweet baking chocolate
Line 8x8 pan with foil. Making sure foil extends over the sides of the pan. With mixer beat together butter and peanut butter till well blended. Mix in wafer crumbs. Gradually add powdered sugar, mixing well after each addition. Press into bottom of pan.
Microwave Cool Whip and chocolate on high for 1 minute. Stir. Microwave 15-30 seconds more or until chocolate is melted. Stir till blended. Pour over peanut butter mixture.
Chill two hours. Use foil handles to lift dessert from pan before cutting. Enjoy!
