Apricot Chicken.

We haven't been doing much cooking around here lately. With everyone's schedules the last few weeks it was tough to find time to eat, let alone cook! (there have been many nights lately where we're just sitting down to dinner at 7:30) But this week I've been inspired to cook.

Why? I don't know. Maybe it's because the sun has been shining? Maybe because our schedule doesn't seem quite as crazy? Or maybe I realized how much I have missed cooking? I don't really know.

But I do know it's Wednesday morning and I already have dinner going in the crockpot. The beds aren't made, Addie isn't dressed and I've only had one cup of coffee, but I have dinner going and I'm feeling pretty good about that!

But what I am really excited about is eating this particular meal. It's one of our favorites. Add a side dish of rice and a fresh salad and...... yum! It just doesn't get much better than that! (yes, prime rib would be better, but that's out of the question for today!)

And because I'm feeling pretty generous this morning I thought I'd share the recipe. Those of you who know me well know that I don't share my recipes easily, so you know that (a) I must be feeling pretty happy this morning and (b) it must be pretty good! So, enjoy!


Apricot Chicken
1 envelope dry onion soup mix
1 cup Western dressing
1 cup Apricot Preserves
4-6 chicken breasts

Combine first three ingredients in a medium bowl. Place chicken on bottom of crock pot. Pour dressing mixture over the chicken, cover and cook on low 7-9 hours or high 3-4 hours.
